There is nothing quite like homemade pancakes for breakfast at home on any given morning.
When I have time to make a fuss over breakfast I make these.
They have become one of 👦 C's all time favorites 😋
For me they pack the perfect combination of flavors & textures.
Light, airy yet buffy, buttery and just heavenly delicious.

This recipe makes about 10 - 12 standard-size pancakes.
Adjust measurement accordingly to your preference.
Wet Ingredients
- 2 cup All Purpose flour (opt for 1/2 Whole Wheat flour for 'healthy' option)
- 1 tbs sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 2 cups buttermilk (well shaken)
- 1/4 cup milk (opt for almond milk, if you like)
- 2 large eggs1/4 cup cannola/neutral oil
- a splash of vanilla extract
and another bowl mix wet ingredients together.
Pour the wet mixture into the dry mixture and mix until combined.
Do not over mix otherwise the pancakes will taste rubbery, batter should be slightly lumpy.
Heat the lightly greased griddle or heavy skillet.
Pour batter on the hot griddle.
Add your choice of fruits (fresh or frozen), chocolate chips, and/or walnuts if you fancy
Flip pancake when you see bubbles form on top of the batter.
Serve warm with butter and maple syrup.
Top with fresh fruits for your Instagram photo op.
