This recipe fits the bill!
It requires only a few ingredients, very little prep, and no brain power needed whatsoever.
What's more, you can tailor this recipe to any combination of cheese with vegetables you have on hand. And it is as easy to make as many to serve a large crowd as it is to make one to serve two.
This pizza is simple to throw together and takes minutes to bake. You get crispy on the edges, rich molten cheese, and the flavor of the roasted tomatoes and sweetness of onion in every bite.
1 9-by-12-inch piece of lavash
grated or shredded fresh mozzarella
sliced plum tomatoes
1/4 red onion, sliced
crumbled goat cheese
a pinch of fresh or dried thyme
Salt & freshly ground pepper
1TBS extra virgin olive oil
You can find lavash bread at Trader Joe's.
But feel free to substitute with your choice of flatbread.
Heat your oven to 375°F with a pizza stone in it (if you have one).
Slice your red onion and tomatoes.
Place the lavash on a baking sheet & sprinkle the mozzarella all over.
Top with the tomato slices and onion.
Toss the goat cheese over and between the tomato slices.
Add a sprinkle with thyme, salt and pepper.
Drizzle on the olive oil & place in the oven and bake 15 to 20 minutes.
Until the lavash is crisp and dark brown on the edges.
Remove from the oven.
Cut with into slices using pizza wheel or scissors
Serve with a cold glass of white vino preferably.
