Naked Rustic Cake

There is just something about the exposed golden layers with barely-there frosting and bright fresh berries. It is rustic yet shabby chic and absolutely gorgeous cake I have ever laid my eyes upon. I decided that I must bake this beautiful unfrosted cake for my son's 1st birthday. And I did...
It was my first time ever to make a naked cake. I had my doubts and was skeptical of its aesthetic. But the cake turned out stunning.
Lightly frosted my favorite vanilla cream cheese frosting.
Topped with a gorgeous bunch of berries.
Dusted of confection sugar.
And the cake was scrumptious and good looking!

I could use some practice on my cake decorating technique. But that's a beauty about naked cake: it doesn't have to be perfect.

The imperfection adds a rustic touch with a hint of personality.

If you fancy yourself to make one for someone special, give this a taste:

I N G R E D I E N T S

2 ½ C cake flour
2 ½ tsp baking powder
1 tsp baking soda
1 tsp salt
4 eggs
1 ½ C sugar
3 tsp pure vanilla extract
1 C oil (vegetable or canola)
1 C buttermilk

D I R E C T I O N S
- Preheat oven to 350*F.

- Stir together cake flour, baking powder, baking soda and salt in a medium bowl. Set flour mixture aside.

- In another bowl beat eggs 10-20 seconds  (I used an electric mixer...but a hand mixer will do just fine). Add sugar to eggs and continue to beat on medium speed for ~ 30 seconds. Add vanilla and oil, beat.

- Then reduce mixer speed to low and slowly add about half of the flour mixture and half of the milk. Beat for ~10 seconds then add the other half of the flour mixture and the milk. Beat until just combined. Scrap down the side of the bowl. The batter will be thin.

- Pour batter into a buttered/greased cake pans. Fill about 2/3 full. This will make 2x 8" cake layers.

- Bake cake layers in pre-heated oven for 25-40 minutes depending on your oven and the size of the pans. When you get a whiff of sweet buttery vanilla cake aroma from your oven, it's time to check its doneness: inset a toothpick in the center and you want it to come out clean.

- Cool in pan ~5 minutes, then remove cake from pans and finish cooling on a wire rack.

- I took an extra step of wrapping in plastic wrap and cooling the layers in the fridge for ~1 hour before frosting to prevent the cake from crumbling in the process.

-  When fully cool, frost with your favorite icing.

Cream Cheese Frosting
 ½ cup unsalted butter (room temperature)
8 oz cream cheese (directly from fridge)
1 tsp pure vanilla extract
4 C confectioners sugar
1 to 4 Tbs heavy cream

 Directions:
- In a large mixing bowl and beat butter until smooth. Add cream cheese and blend until fully combined and smooth  ~30 seconds.
- Add vanilla extract and powdered sugar blend on low speed until combined. Increase to medium speed and beat until it begins to get fluffy.
- Slowly add the heavy cream, a little bit at a time until desired consistency is met.
- Beat until fluffy, about 1 minute.
