Even before my pregnancy I've always like to cook a big pot of meal on Sunday night to last me for the next few weekdays so I would have to cook on a week night. And if you're anything like me, being tired after a long day of work being on your feet doesn't help the whole dinner part of the evening. That's where slow cooker meals come into play. Best of all this recipe is super easy to make. The only real work you have to do is the prepping and throw everything in the crockpot on a Sunday morning or right before you go to work. And the moment you walk through your front door, you will be greeted by this wonderfully pleasant, warm, and spicy aroma. Oh, don't be surprise if your stomach rumble or growl by now.

I made this dish for dinner last week and served with fluffy bowl of Jasmine rice.

To make a big pot of this recipe, you'll need:

2 pounds boneless, skinless chicken thighs, cubed/bite-sized
1 ¼ tablespoons garam masala
1 teaspoon ground turmeric
2 teaspoons paprika
1 tablespoon ground cumin
¼ teaspoon ground cinnamon
¼ teaspoon ground cardamom
2 teaspoons kosher salt or to taste
¼ teaspoon ground black pepper
1/2 cup greek yogurt
1 large onion, diced
3-4 cloves garlic, minced
1-inch piece whole ginger, peeled and grated
1 jalapeño, seeded and chopped
2 tablespoons tomato paste
1 (28-ounce) can diced tomatoes
1/2 cup coconut milk or coconut cream
potato & carrot, cubed (optional) Fresh cilantro, chopped
cooked rice, to serve

1. Combine all the spices: garam masala, turmeric, paprika, cumin, cinnamon, cardamom, and s&p.

2. Marinate the chicken in 1/2 cup yogurt with spice mixture for 1 hour, up to 6 hours, in the fridge.
Note: you can skip this step completely. But if you have time or is planning ahead, I highly recommended doing it because it adds so much depth and flavor.

3. Transfer them to a large crock pot. I love my Hamilton Beach 6 Quart Slow Cooker (got it as wedding present).

4. Meanwhile, sauté the onions and garlic in a little olive oil over medium-high heat in a skillet until softened, then stir in the ginger, tomato paste, and additional 2 teaspoons of garam masala until fragrant.

5 Transfer to the slow cooker with the chicken and Stir in the diced tomatoes with their juices.

→ By marinate the chicken for a couple of hours and sauté the onions & spices will give your tikka masala more depth of flavor.

6. Cover the slow cooker and cook for 4 hours on high or 8 hours on low.
If using potatoes and/or carrots, add in 30 - 45 minutes before the end of cooking time.
7. Fifteen minutes before the end of cooking, stir in the heavy cream. Taste and add more salt or fish sauce to taste. If you prefer a thicker sauce, leave the slow cooker uncovered for the last 15 minutes.

Serve over rice with fresh cilantro sprinkled over the top of each serving.

→ By marinate the chicken for a couple of hours and sauté the onions & spices will give your tikka masala more depth of flavor.
→ If using potatoes and/or carrots - cubed and boiled until fork-tender in a separately, add in 15-30 minutes before the end of cooking time.
