No-Dough Pizza with Mozzarella, Goat Cheese & Tomato

By Vy Primozich - 11:30 AM

A minimal, fuss-free yet appetizing dinner is what everyone wants on any given weeknight and I'm no exception.

I'm always looking for quick and easy recipes to feed Christian & I.

This recipe fits the bill!

It requires only a few ingredients, very little prep, and no brain power needed whatsoever.
What's more, you can tailor this recipe to any combination of cheese with vegetables you have on hand. And it is as easy to make as many to serve a large crowd as it is to make one to serve two.

This pizza is simple to throw together and takes minutes to bake. You get crispy on the edges, rich molten cheese, and the flavor of the roasted tomatoes and sweetness of onion in every bite.

To make one pizza (and you can double, triple or multiply as needed), you'll need:

1 9-by-12-inch piece of lavash

grated or shredded fresh mozzarella

sliced plum tomatoes

1/4 red onion, sliced

crumbled goat cheese

a pinch of fresh or dried thyme

Salt & freshly ground pepper

1TBS extra virgin olive oil

You can find lavash bread at Trader Joe's.
But feel free to substitute with your choice of flatbread.
