If there's one thing I love more than a really good, fresh lobster roll, it's a really good, fresh lobster roll I don't have to leave the house for!

I was first introduced to the lobstah roll at a mom and pop market in a tiny little town Lovell, Maine and have become utterly obsessed. I have yet to find the same deliciousness here in town.

There's a couple pretty good lobster roll food trucks here in Austin.
My favorite is Garbo's Lobster Truck.
The truck get lobsters daily & freshly delivered from Maine!
Depending on the day and time, the truck moves to different places.

And it's my mister's favorite. Having grown up in New England, Chris have a love for all things seafood especially lobstah! So I made my version for him at home.
Very few people make lobster roll at home, intimidated by the idea of it.
BUT it is pleasantly easy!!! Trust me if you made it once you'll be whipping it up for nibbles every time you have company or want to wow your company.

Let's get down to business!

Lobster Roll Sliders

The recipe is wonderfully simple and you end up with the most incredibly delicious piles of lobster meats with grilled honey wheat rolls holding all the freshness together.
The real key is really fresh lobster. Go to your local seafood monger or supermarket and purchase live lobsters or fresh lobster tails. (In my case, the supermarket just received a new load of fresh lobster tails that I couldn't pass up.)

You'll need:
 4 lobster tails - about 4oz each
1 celery stalk
fresh chive
lemon
Boston or Butterhead lettuce
a knob of butter
honey wheat rolls (or hot dog buns)
mayonaise
dijon mustard
salt & pepper
Cayenne powder

First you lay your lobster rolls on a chopping surface.
Make a cut straight down the middle of the shell on each tail.
Crack open each shell.

Melt your knob of butter. Add salt, pepper & cayenne powder.
Pour the mixture over the lobster meat of each tail.
Pop 'em in the oven & broil for 10 minutes - until opaqued.

Meanwhile, get chopping with the celery stalk and tearing Butterhead lettuce.

In a medium bowl, whisk together a tablespoon of mayonaise + Dijon mustard + salt&pepper
Pluck the lobster meat from each tail and give 'em a few chop.
Add the chopped lobster to the mixture in the bowl.
Toss it all together.

Serve 'em on toasted hotdog buns or honey wheat rolls.

To prevent the buns from soaking wet, place a piece of lettuce on the bread prior to pile it with lobster.

It is effortlessly easy to whip up.
You can serve these babies as a side to whatever you have on hand or as the main entree.
