Banana Cream Pie Cupcakes

Ingredients

Cupcakes: (makes ~24 - 28)
  • 2.5C flour
  • 1Tbl baking soda
  • 1Tsp cinnamon
  • 1/8Tsp salt
  • 0.5C unsalted butter (softened)
  • 1C sugar
  • 3/4C light brown sugar
  • 2 large eggs
  • 1Tsp vanilla extract
  • 1C mashed ripe bananas
  • 2/3C sour cream


Banana Budding/Filling:
  • 1 pkg instant banana pudding
  • 1C milk
  • 1Tsp vanilla extract
  • combine - refrigerate for 30 mins.


Vanilla Frosting:
  • 1 pkg instant vanilla pudding
  • 1C milk
  • 1Tsp vanilla extract
  • 8oz Whipped topping
  • 1/4C powdered sugar
  • mix ingredients, add in whipped topping, & refrigerate for 30 mins.
Preheat oven to 375 °F. Bake ~20 mins.

Cool. Cut small circle out of top of each cupcake.

Fill each with banana pudding filling.

Top with Vanilla Whipped frosting.

Garnish with Graham crackers & banana.
